La vera carbonara, motivo di orgoglio degli italiani ed in particolare dei romani, è stata inventata negli Stati Uniti. Prima del 1944 la carbonara non esisteva. Lo ha spiegato e affermato senza timore di essere smentito Emilio Dente Ferracci, archeologo e storico della cucina. A conferma della sua scoperta, nemmeno nella "bibbia" della “Cucina romana” di Ada Boni, risalente al 1930, nessuna traccia. L’origine della pasta alla carbonara risiede sicuramente nella “Razione Kappa” americana, che Ancel Keys, biologo e fisiologo statunitense, inventò nel 1942 per garantire una dieta adeguata alle truppe alleate. I soldati americani accompagnavano la “Razione K”, nello specifico il tuorlo d’uovo in polvere e il bacon con gli spaghetti per aumentare la dose di carboidrati. Era l’anno 1945 quando i militari statunitensi, nella città affamata del Dopoguerra, portarono gli ingredienti a loro disposizione: bacon e uova liofilizzate. Roma che credeva di avere i diritti di "autore" deve ora ricredersi e puntare su un'altra pietanza tipica della Capitale.
